Crock Pot Roast Beef

I made this roast beef a couple weeks ago using my crock pot. The crock pot is one of the easiest ways to cook and everything always comes out so tasty! I got this particular recipe from “Proud Italian Cook”. Instead of using fresh veggies, they suggested using Giardinera, which is a variety of pickled vegetables. This was one of the juiciest roasts I’ve ever had and it made one heck of a sandwich the next day.

Crock Pot Roast Beef

3 or 4 lb rump roast or top round

Low sodium vegetable broth

Giardinera (usually a mixture of carrots, celery, cauliflower, peppers and onions)

Make slits in the meat and stuff with slivers of garlic. Generously season with salt, pepper and dried oregano. Sear the roast on the top and bottom before you stick it in the crock pot. Pour the whole bottle of drained Giardinera over the roast. Refill the bottle with the vegetable broth and pour over roast. Cook on low for 8 hours and tada! You’re done!
